A real little gem in Lyon. No menu here - you only choose the number of courses. Everything was surprising, creative, fresh and delicious. From the mushroom soup with a mushroom filled crunchy brioche, to the perfectly cooked and tender veal with pappardelle, A lake fish with zucchini and 3 chocolate fingers with different fillings.
L’Institute is a school-restaurant of Paul Bocuse where students can practice the different skills of the culinary world - from kitchen to service. The food was absolutely remarkable!!! In the pictures: Lamb shoulder cooked for 12 hours ➡ Beef tenderloin on a bed of macaroni & parmesan cheese ➡ An incredible praliné puff pastry we had to order twice!
